Here we have combined two 2008 rye barrel matured Aultmore casks and ⅓ of an Oloroso seasoned Aultmore octave (the remainder of the octave was bottled exclusively for Dornoch Castle Hotel). The spicy and nutty rye barrels combined with a heavy, albeit small, punch of the cask of Oloroso delivers some beautiful sweet and savoury flavours, probably more akin to what you would expect from something matured in Amontillado. This whisky has been carefully diluted to 48.5% and bottled without chill-filtration.

Nose: Salted banana bread, green olives, pistachios, orange peel, sour pineapple, cinnamon powder and rapeseed

Palate: Haribo eggs, bright and fizzy, wood spice, manzanilla, chilli peppers, Scottish summer

Finish: Spicy and mouthcoating with medium length
